Low Fat Crock Pot Recipes

Today I am going to share two of my favorite low fat crock pot recipes. I love using the crock pot even if it means I have to clean it later. I know there are crock pot liners but I can never find them in the grocery store. Now that the school year is on its way I will need a supply since I rely on my crock pot to feed my family several times a week. Due to that reliance I have to make sure what I am making is healthy.
Salsa Chicken
My children love this meal. I use the leftovers for tacos or fajitas. You could try using the leftovers for quesadillas as well.
Ingredients:
5 Chicken Breasts (I always purchase hormone free and trim it or cut into strips.)
1 (16 oz) jar of mild salsa (I purchase whatever is on sale.)
½ package of taco seasoning
You can add in rice now or make it later.
Cook on low for 6 to 8 hours.
Salsa Chicken is so simple and versatile. I know you will find a million ways to make this basic recipe your own.
Italian Chicken
My kids enjoy this meal as well. This is another basic recipe you can make your own. I use it on noodles if I have any leftover chicken. You can also use the leftover chicken in other pasta meals.
Ingredients:
5 chicken breasts
1 package Italian dressing mix
¼ cup water
1 (8 oz) low fat cream cheese (you can use non fat as well)
1 can low fat cream of chicken soup
3 cups white rice or use noodles (you can add the rice to the crock pot but you will need to add extra water)
Directions:
Put the chicken in the crock pot and top with water and salad dressing mix.
Mix cream cheese and cream of chicken soup then add to crock pot.
